- Red bell pepper - 2 large
- Zucchini - 150 grams, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Chickpeas - 150 grams, cooked
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Preheat your oven to 200°C (390°F).
- Cut the tops off the bell peppers and remove the seeds and membranes carefully.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent, about 5 minutes.
- Add the diced zucchini and cook for another 5 minutes until softened.
- Stir in the diced tomato, cooked chickpeas, smoked paprika, cumin, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
- Remove the skillet from heat and mix in the chopped parsley and lemon juice.
- Stuff each bell pepper with the vegetable and chickpea mixture, packing it tightly.
- Place the stuffed peppers upright in a baking dish and drizzle with a little olive oil.
- Cover with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes to lightly char the tops.
- Remove from the oven and let cool for a few minutes before serving.
