Ingredients

  • Green lentils - 150 grams
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Celery - 1 stalk, chopped
  • Red bell pepper - 1/2, diced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Bay leaf - 1
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat and sauté the onion and garlic until fragrant, about 3-4 minutes.
  3. Add the diced carrot, potato, celery, and red bell pepper to the pot. Sauté for another 5 minutes until the vegetables begin to soften.
  4. Stir in the lentils, vegetable broth, bay leaf, paprika, cumin, salt, and black pepper.
  5. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  6. Simmer for about 30 minutes, or until the lentils are tender, stirring occasionally.
  7. Remove the bay leaf, adjust seasoning if necessary, and serve hot, garnished with fresh parsley.
