- Green lentils - 150 grams

- Olive oil - 2 tablespoons
- Vegetable broth - 500 milliliters
- Bay leaf - 1

Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat and sauté the onion and garlic until fragrant, about 3-4 minutes.
- Add the diced carrot, potato, celery, and red bell pepper to the pot. Sauté for another 5 minutes until the vegetables begin to soften.
- Stir in the lentils, vegetable broth, bay leaf, paprika, cumin, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Simmer for about 30 minutes, or until the lentils are tender, stirring occasionally.
- Remove the bay leaf, adjust seasoning if necessary, and serve hot, garnished with fresh parsley.
