  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 750 ml
  • Bay leaf - 1
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - fresh, chopped for garnish

Steps

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  2. Add the diced carrot, potato, and red bell pepper to the pot. Cook for about 5 minutes, stirring occasionally.
  3. Stir in the soaked chickpeas, diced zucchini, and paprika. Mix well to coat the vegetables.
  4. Pour in the vegetable broth and add the bay leaf. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes, or until the chickpeas are tender.
  5. Add the fresh spinach and simmer for an additional 5 minutes, until wilted. Season with salt and black pepper to taste.
