- Lamb shoulder - 150 grams
- Chorizo sausage - 100 grams
- Chickpeas - 100 grams (soaked overnight)
- Carrot - 1 medium, chopped
- Potato - 1 medium, diced
- Green beans - 100 grams, trimmed
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Tomato - 1 medium, chopped
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Water - 1.5 liters
Steps
- In a large pot, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the chicken thighs, lamb shoulder, and chorizo sausage to the pot, browning the meats on all sides.
- Stir in the chopped tomato, paprika, bay leaf, salt, and black pepper. Cook for about 5 minutes.
- Add the soaked chickpeas and water to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Add the chopped carrot, diced potato, and green beans to the pot. Continue to simmer for an additional 30 minutes, or until the vegetables and meats are tender.
- Check the seasoning and adjust salt and pepper to taste before serving.
