Ingredients

  • Dried shredded coconut - 150 grams
  • Egg whites - 2 large
  • Honey - 30 grams
  • Vanilla extract - 1 teaspoon
  • Protein powder (vanilla flavor) - 30 grams
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the dried shredded coconut, protein powder, and a pinch of salt.
  3. In another bowl, whisk the egg whites until soft peaks form.
  4. Gently fold the honey and vanilla extract into the egg whites.
  5. Carefully incorporate the coconut mixture into the egg whites until well combined.
  6. Spoon the mixture onto the prepared baking sheet, forming small mounds.
  7. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
