- All-purpose flour - 200 grams
- Warm water - 100 ml
- Olive oil - 30 ml
- Yeast - 5 grams
- Salt - 5 grams
- Red bell pepper - 50 grams, chopped
- Zucchini - 50 grams, sliced
- Eggplant - 50 grams, diced
- Onion - 30 grams, finely chopped
- Garlic - 1 clove, minced
- Paprika - 1 teaspoon
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- While the dough is rising, heat some olive oil in a pan over medium heat and sauté the onion and garlic until translucent.
- Add the red bell pepper, zucchini, and eggplant, and cook for another 5-7 minutes until the vegetables are tender. Season with paprika, black pepper, and salt. Remove from heat.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, punch it down and roll it out to a rectangular shape (about 1 cm thick).
- Transfer the dough to a baking tray lined with parchment paper. Spread the sautéed vegetables evenly over the top.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
- Remove from the oven, garnish with fresh parsley, slice, and serve warm.
