Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Olive oil - 30 ml
  • Yeast - 5 grams
  • Salt - 5 grams
  • Red bell pepper - 50 grams, chopped
  • Zucchini - 50 grams, sliced
  • Eggplant - 50 grams, diced
  • Onion - 30 grams, finely chopped
  • Garlic - 1 clove, minced
  • Paprika - 1 teaspoon
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  5. While the dough is rising, heat some olive oil in a pan over medium heat and sauté the onion and garlic until translucent.
  6. Add the red bell pepper, zucchini, and eggplant, and cook for another 5-7 minutes until the vegetables are tender. Season with paprika, black pepper, and salt. Remove from heat.
  7. Preheat the oven to 220°C (428°F).
  8. Once the dough has risen, punch it down and roll it out to a rectangular shape (about 1 cm thick).
  9. Transfer the dough to a baking tray lined with parchment paper. Spread the sautéed vegetables evenly over the top.
  10. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
  11. Remove from the oven, garnish with fresh parsley, slice, and serve warm.
