  • Granulated sugar - 30 grams
  • Salt - 1 pinch
  • Cold water - 2 tablespoons
  • Almonds (finely ground) - 50 grams
  • Powdered sugar - for dusting
  • Lemon zest - 1 teaspoon
  • Egg (beaten, for egg wash) - 1 small

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour, cold cubed butter, granulated sugar, and a pinch of salt. Mix until the mixture resembles coarse crumbs.
  3. Add the cold water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  4. While the dough is chilling, prepare the almond filling by mixing the finely ground almonds, remaining granulated sugar, and lemon zest in a bowl.
  5. Roll out the chilled dough on a lightly floured surface to a thickness of about 0.5 cm (1/4 inch).
  6. Transfer the rolled dough into a greased baking dish, pressing it gently into the corners.
  7. Spread the almond filling evenly over the surface of the dough.
  8. Brush the edges of the dough with the beaten egg for a golden finish.
  9. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
  10. Remove from the oven and let cool slightly. Dust with powdered sugar before serving.
