- Almond flour - 100g
- Coconut flour - 20g
- Baking powder - 1 tsp
- Salt - 1/4 tsp
- Eggs - 2 large
- Butter - 60g, melted
- Vanilla extract - 1 tsp
- Erythritol (or preferred sweetener) - 2 tbsp
- Cinnamon - 1 tsp (for dusting)
- Coconut oil (for frying) - 300ml
Steps
- In a mixing bowl, combine the almond flour, coconut flour, baking powder, and salt until well mixed.
- In another bowl, whisk together the eggs, melted butter, vanilla extract, and erythritol until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Transfer the dough to a piping bag fitted with a star-shaped nozzle.
- In a deep frying pan, heat coconut oil over medium heat until hot (about 180°C).
- Pipe strips of dough directly into the hot oil, cutting them to your desired length with scissors.
- Fry the churros for about 2-3 minutes on each side, or until golden brown and crispy.
- Remove the churros from the oil and place them on paper towels to drain excess oil.
- In a small bowl, mix the cinnamon and erythritol together, then roll the warm churros in this mixture.
- Serve immediately, and enjoy your keto churros!
