Ingredients

  • Almond flour - 100g
  • Coconut flour - 20g
  • Baking powder - 1 tsp
  • Salt - 1/4 tsp
  • Eggs - 2 large
  • Butter - 60g, melted
  • Vanilla extract - 1 tsp
  • Erythritol (or preferred sweetener) - 2 tbsp
  • Cinnamon - 1 tsp (for dusting)
  • Coconut oil (for frying) - 300ml

Steps

  1. In a mixing bowl, combine the almond flour, coconut flour, baking powder, and salt until well mixed.
  2. In another bowl, whisk together the eggs, melted butter, vanilla extract, and erythritol until smooth.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  4. Transfer the dough to a piping bag fitted with a star-shaped nozzle.
  5. In a deep frying pan, heat coconut oil over medium heat until hot (about 180°C).
  6. Pipe strips of dough directly into the hot oil, cutting them to your desired length with scissors.
  7. Fry the churros for about 2-3 minutes on each side, or until golden brown and crispy.
  8. Remove the churros from the oil and place them on paper towels to drain excess oil.
  9. In a small bowl, mix the cinnamon and erythritol together, then roll the warm churros in this mixture.
  10. Serve immediately, and enjoy your keto churros!
