- Beef rib steak (chuletón) - 800 grams
- Kosher salt - 2 teaspoons
- Freshly ground black pepper - 1 teaspoon
- Olive oil - 2 tablespoons
- Fresh rosemary - 1 sprig
- Garlic cloves - 3, smashed
- Lemon - 1, for serving
Steps
- Remove the chuletón from the refrigerator and let it rest at room temperature for about 30 minutes before cooking.
- Preheat your grill to high heat, ensuring the grates are clean and well-oiled.
- Season both sides of the chuletón generously with kosher salt and freshly ground black pepper.
- In a small bowl, mix the olive oil with the smashed garlic cloves and chopped rosemary.
- Once the grill is hot, place the chuletón on the grill and cook for 6-8 minutes per side for medium-rare, basting with the garlic-rosemary oil every couple of minutes.
- Use a meat thermometer to check for doneness; the internal temperature should be around 54-57°C (130-135°F) for medium-rare.
- Once cooked to your liking, remove the steak from the grill and let it rest for 5-10 minutes.
- Slice the chuletón against the grain and serve with lemon wedges on the side for squeezing over the meat.
