Ingredients

  • Beef rib steak (chuletón) - 800 grams
  • Kosher salt - 2 teaspoons
  • Freshly ground black pepper - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh rosemary - 1 sprig
  • Garlic cloves - 3, smashed
  • Lemon - 1, for serving

Steps

  1. Remove the chuletón from the refrigerator and let it rest at room temperature for about 30 minutes before cooking.
  2. Preheat your grill to high heat, ensuring the grates are clean and well-oiled.
  3. Season both sides of the chuletón generously with kosher salt and freshly ground black pepper.
  4. In a small bowl, mix the olive oil with the smashed garlic cloves and chopped rosemary.
  5. Once the grill is hot, place the chuletón on the grill and cook for 6-8 minutes per side for medium-rare, basting with the garlic-rosemary oil every couple of minutes.
  6. Use a meat thermometer to check for doneness; the internal temperature should be around 54-57°C (130-135°F) for medium-rare.
  7. Once cooked to your liking, remove the steak from the grill and let it rest for 5-10 minutes.
  8. Slice the chuletón against the grain and serve with lemon wedges on the side for squeezing over the meat.
