- Cumin - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the grill to medium-high heat.
- Cut the red bell pepper, zucchini, and eggplant into bite-sized pieces.
- In a mixing bowl, combine the chopped vegetables, cooked chickpeas, smoked paprika, garlic powder, cumin, olive oil, salt, and black pepper. Toss until evenly coated.
- Thread the vegetable and chickpea mixture onto skewers, alternating the ingredients for even cooking.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and charred.
