  • Chickpeas (cooked) - 200 grams
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat the grill to medium-high heat.
  2. Cut the red bell pepper, zucchini, and eggplant into bite-sized pieces.
  3. In a mixing bowl, combine the chopped vegetables, cooked chickpeas, smoked paprika, garlic powder, cumin, olive oil, salt, and black pepper. Toss until evenly coated.
  4. Thread the vegetable and chickpea mixture onto skewers, alternating the ingredients for even cooking.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and charred.
