Ingredients

  • Parsnips - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh rosemary - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel the parsnips and cut them into even-sized sticks, approximately 1 cm thick.
  3. In a mixing bowl, combine the parsnip sticks with olive oil, minced garlic, chopped rosemary, salt, and black pepper. Toss until evenly coated.
  4. Spread the seasoned parsnips in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25 minutes, turning halfway through, until the parsnips are golden brown and tender.
  6. Remove from the oven and drizzle with lemon juice before serving.
