Ingredients

  • Poblano peppers - 2
  • Ground beef - 150 grams
  • Cream cheese - 100 grams
  • Shredded cheddar cheese - 50 grams
  • Garlic - 1 clove, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roast the poblano peppers on a baking sheet for about 20 minutes, turning occasionally, until the skins are blistered and charred.
  3. While the peppers are roasting, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute.
  4. Add the ground beef to the skillet, followed by cumin, paprika, salt, and black pepper. Cook until the beef is browned and cooked through, about 5-7 minutes.
  5. Reduce the heat and stir in the cream cheese until melted and well combined. Remove from heat and mix in the shredded cheddar cheese until melted.
  6. Once the peppers are roasted, remove them from the oven and let them cool slightly. Carefully peel off the charred skin and make a slit down the side of each pepper to remove the seeds.
  7. Stuff each pepper with the beef and cheese mixture, pressing gently to pack it in.
  8. Place the stuffed peppers back on the baking sheet and bake for an additional 10 minutes until heated through and slightly golden.
  9. Garnish with fresh cilantro before serving.
