Ingredients
- Poblano peppers - 2
- Ground beef - 150 grams
- Cream cheese - 100 grams
- Shredded cheddar cheese - 50 grams
- Garlic - 1 clove, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Roast the poblano peppers on a baking sheet for about 20 minutes, turning occasionally, until the skins are blistered and charred.
- While the peppers are roasting, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute.
- Add the ground beef to the skillet, followed by cumin, paprika, salt, and black pepper. Cook until the beef is browned and cooked through, about 5-7 minutes.
- Reduce the heat and stir in the cream cheese until melted and well combined. Remove from heat and mix in the shredded cheddar cheese until melted.
- Once the peppers are roasted, remove them from the oven and let them cool slightly. Carefully peel off the charred skin and make a slit down the side of each pepper to remove the seeds.
- Stuff each pepper with the beef and cheese mixture, pressing gently to pack it in.
- Place the stuffed peppers back on the baking sheet and bake for an additional 10 minutes until heated through and slightly golden.
- Garnish with fresh cilantro before serving.
