- Chickpeas - 240 grams (cooked)
- Potato - 150 grams (peeled and diced)
- Red bell pepper - 1 medium (diced)
- Onion - 1 small (finely chopped)
- Garlic - 2 cloves (minced)
- Olive oil - 3 tablespoons
- Turmeric - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons (chopped)
- Water - 100 ml
Steps
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and cook for about 8-10 minutes, stirring occasionally, until they are lightly golden and tender.
- Add the chopped onion and diced red bell pepper to the skillet, cooking for another 5 minutes until the vegetables are softened.
- Stir in the minced garlic, turmeric, cumin, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
- In a large bowl, mash the cooked chickpeas with a fork or potato masher, leaving some chunks for texture. Add the vegetable mixture and 100 ml of water, mixing well until combined.
- Wipe the skillet clean and add the remaining olive oil. Pour the chickpea mixture into the skillet, spreading it evenly.
- Cook on medium heat for about 5-7 minutes until the bottom is golden brown. Carefully flip the tortilla using a large plate or lid, and cook the other side for another 5-7 minutes until browned and set.
- Once cooked, remove from heat and sprinkle with fresh parsley before slicing into wedges. Serve warm.
