Ingredients

  • Chickpeas - 240 grams (cooked)
  • Potato - 150 grams (peeled and diced)
  • Red bell pepper - 1 medium (diced)
  • Onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Olive oil - 3 tablespoons
  • Turmeric - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons (chopped)
  • Water - 100 ml

Steps

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and cook for about 8-10 minutes, stirring occasionally, until they are lightly golden and tender.
  2. Add the chopped onion and diced red bell pepper to the skillet, cooking for another 5 minutes until the vegetables are softened.
  3. Stir in the minced garlic, turmeric, cumin, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
  4. In a large bowl, mash the cooked chickpeas with a fork or potato masher, leaving some chunks for texture. Add the vegetable mixture and 100 ml of water, mixing well until combined.
  5. Wipe the skillet clean and add the remaining olive oil. Pour the chickpea mixture into the skillet, spreading it evenly.
  6. Cook on medium heat for about 5-7 minutes until the bottom is golden brown. Carefully flip the tortilla using a large plate or lid, and cook the other side for another 5-7 minutes until browned and set.
  7. Once cooked, remove from heat and sprinkle with fresh parsley before slicing into wedges. Serve warm.
