- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chopped red bell pepper and diced carrot, cooking for 5 minutes until softened.
- Stir in the diced tomato, paprika, cumin, salt, and black pepper, cooking for 2-3 minutes until the tomatoes begin to break down.
- Pour in the vegetable broth and bring to a gentle simmer.
- Add the canned chickpeas (drained and rinsed) and let the stew simmer for 15-20 minutes, stirring occasionally.
- Adjust seasoning if necessary and remove from heat.
