Chickpea Fritters

- Chickpeas - 200 grams (cooked or canned, drained)
- All-purpose flour - 50 grams
- Garlic - 2 cloves, minced
- Red bell pepper - 50 grams, finely diced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - for frying
Steps
- In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the all-purpose flour, minced garlic, diced red bell pepper, cumin, paprika, salt, black pepper, and chopped parsley to the mashed chickpeas. Mix until well combined.
- Form the mixture into small patties, about 5 cm in diameter and 1 cm thick.
- Heat a non-stick frying pan over medium heat and add enough olive oil to coat the bottom.
- Once the oil is hot, carefully place the chickpea fritters in the pan, cooking them in batches if necessary to avoid overcrowding.
- Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the pan and drain on paper towels to remove excess oil.
- Serve warm with your favorite dipping sauce or a squeeze of lemon.
