Ingredients

  • Chickpeas - 200 grams (cooked or canned, drained)
  • All-purpose flour - 50 grams
  • Garlic - 2 cloves, minced
  • Red bell pepper - 50 grams, finely diced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - for frying

Steps

  1. In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the all-purpose flour, minced garlic, diced red bell pepper, cumin, paprika, salt, black pepper, and chopped parsley to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into small patties, about 5 cm in diameter and 1 cm thick.
  4. Heat a non-stick frying pan over medium heat and add enough olive oil to coat the bottom.
  5. Once the oil is hot, carefully place the chickpea fritters in the pan, cooking them in batches if necessary to avoid overcrowding.
  6. Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove the fritters from the pan and drain on paper towels to remove excess oil.
  8. Serve warm with your favorite dipping sauce or a squeeze of lemon.
