Ingredients

  • Large onions - 2
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Tomato - 1 medium, diced
  • Chickpeas - 100 grams, cooked
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Grated cheese (optional) - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Carefully cut the tops off the onions and scoop out the insides using a spoon, leaving a hollow shell. Set aside the onion flesh.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the diced red bell pepper and zucchini to the skillet, cooking for about 5 minutes until softened.
  5. Stir in the diced tomato, chickpeas, paprika, cumin, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.
  6. Chop the reserved onion flesh and add it to the skillet, cooking for an additional 3 minutes. Remove from heat and stir in the fresh parsley.
  7. Stuff each hollow onion with the vegetable mixture, packing it in gently. If desired, top with grated cheese.
  8. Place the stuffed onions in a baking dish and drizzle with a little extra olive oil. Cover with foil.
  9. Bake in the preheated oven for 25-30 minutes until the onions are tender.
  10. Remove the foil and bake for an additional 5 minutes to melt the cheese if used. Serve warm.
