- Large onions - 2
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Tomato - 1 medium, diced
- Chickpeas - 100 grams, cooked
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Grated cheese (optional) - 50 grams
Steps
- Preheat the oven to 180°C (350°F).
- Carefully cut the tops off the onions and scoop out the insides using a spoon, leaving a hollow shell. Set aside the onion flesh.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced red bell pepper and zucchini to the skillet, cooking for about 5 minutes until softened.
- Stir in the diced tomato, chickpeas, paprika, cumin, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.
- Chop the reserved onion flesh and add it to the skillet, cooking for an additional 3 minutes. Remove from heat and stir in the fresh parsley.
- Stuff each hollow onion with the vegetable mixture, packing it in gently. If desired, top with grated cheese.
- Place the stuffed onions in a baking dish and drizzle with a little extra olive oil. Cover with foil.
- Bake in the preheated oven for 25-30 minutes until the onions are tender.
- Remove the foil and bake for an additional 5 minutes to melt the cheese if used. Serve warm.
