  • red bell pepper - 1, diced
  • tomatoes - 400 grams, crushed (canned or fresh)
  • smoked paprika - 1 teaspoon
  • saffron threads - a pinch
  • fish stock - 500 ml
  • shrimp - 200 grams, peeled and deveined
  • mussels - 200 grams, cleaned
  • calamari - 100 grams, sliced
  • fresh parsley - 2 tablespoons, chopped
  • lemon - 1, juiced
  • salt - to taste
  • black pepper - to taste

Steps

  1. In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until soft and translucent, about 5 minutes.
  2. Add the diced red bell pepper and cook for another 3 minutes until it softens.
  3. Stir in the crushed tomatoes, smoked paprika, saffron, and season with salt and black pepper. Cook for about 5 minutes, allowing the flavors to meld.
  4. Pour in the fish stock and bring the mixture to a gentle boil. Reduce the heat and let it simmer for 10 minutes.
  5. Add the shrimp, mussels, and calamari to the pot. Cover and cook for an additional 5-7 minutes, or until the mussels open and the shrimp are cooked through.
  6. Remove from heat, stir in the fresh parsley and lemon juice. Adjust seasoning if necessary.
  7. Serve hot, garnished with additional parsley and lemon wedges if desired.
