- red bell pepper - 1, diced
- tomatoes - 400 grams, crushed (canned or fresh)
- smoked paprika - 1 teaspoon
- saffron threads - a pinch
- fish stock - 500 ml
- shrimp - 200 grams, peeled and deveined
- mussels - 200 grams, cleaned
- calamari - 100 grams, sliced
- fresh parsley - 2 tablespoons, chopped
- lemon - 1, juiced
- salt - to taste
- black pepper - to taste
Steps
- In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until soft and translucent, about 5 minutes.
- Add the diced red bell pepper and cook for another 3 minutes until it softens.
- Stir in the crushed tomatoes, smoked paprika, saffron, and season with salt and black pepper. Cook for about 5 minutes, allowing the flavors to meld.
- Pour in the fish stock and bring the mixture to a gentle boil. Reduce the heat and let it simmer for 10 minutes.
- Add the shrimp, mussels, and calamari to the pot. Cover and cook for an additional 5-7 minutes, or until the mussels open and the shrimp are cooked through.
- Remove from heat, stir in the fresh parsley and lemon juice. Adjust seasoning if necessary.
- Serve hot, garnished with additional parsley and lemon wedges if desired.
