Ingredients

  • Chickpeas (canned) - 400 grams, drained and rinsed
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, diced
  • Red bell pepper - 1, diced
  • Carrot - 1, diced
  • Tomato - 2 medium, diced
  • Vegetable broth - 250 milliliters
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pan, heat the olive oil over medium heat.
  2. Add the diced onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic, diced red bell pepper, and carrot, and cook for another 5 minutes.
  4. Add the diced tomatoes, cumin, paprika, salt, and black pepper, and cook for 3-4 minutes until the tomatoes soften.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Add the rinsed chickpeas and stir well, allowing to cook for another 10-15 minutes until heated through and flavors meld.
  7. Remove from heat and stir in the lemon juice and chopped parsley.
  8. Serve hot in small cazuelas or bowls, garnished with extra parsley if desired.
