- Fideos (thin noodles) - 150 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Tomato - 1 medium, diced
- Vegetable broth - 500 ml
- Saffron threads - 1/4 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced red bell pepper and zucchini to the saucepan, cooking for an additional 3-4 minutes until they begin to soften.
- Stir in the diced tomato, saffron threads, paprika, salt, and black pepper. Cook for another 2 minutes until the tomatoes start to break down.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, add the fideos and reduce the heat to a simmer. Cook for about 10-12 minutes, stirring occasionally, until the noodles are tender and most of the liquid is absorbed.
- Remove from heat and garnish with chopped fresh parsley before serving.
