Ingredients

  • Fideos (thin noodles) - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Saffron threads - 1/4 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the diced red bell pepper and zucchini to the saucepan, cooking for an additional 3-4 minutes until they begin to soften.
  3. Stir in the diced tomato, saffron threads, paprika, salt, and black pepper. Cook for another 2 minutes until the tomatoes start to break down.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Once boiling, add the fideos and reduce the heat to a simmer. Cook for about 10-12 minutes, stirring occasionally, until the noodles are tender and most of the liquid is absorbed.
  6. Remove from heat and garnish with chopped fresh parsley before serving.
