Ingredients

  • Cannelloni pasta - 8 tubes
  • Fresh spinach - 200 grams
  • Ricotta cheese - 150 grams
  • Grated Parmesan cheese - 50 grams
  • Mozzarella cheese - 100 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Tomato sauce - 400 grams
  • Onion - 1 small, finely chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt, black pepper, and nutmeg.
  4. Remove the skillet from heat and let the mixture cool slightly. Then, mix in the ricotta and half of the grated Parmesan cheese.
  5. Stuff each cannelloni tube with the spinach and ricotta mixture using a small spoon or piping bag.
  6. Spread a thin layer of tomato sauce on the bottom of a baking dish.
  7. Arrange the stuffed cannelloni in the dish and cover with the remaining tomato sauce. Sprinkle the mozzarella and the rest of the Parmesan cheese on top.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  9. Allow to cool for a few minutes before serving. Garnish with fresh herbs if desired.
