Ingredients
- Cannelloni pasta - 8 tubes
- Fresh spinach - 200 grams
- Ricotta cheese - 150 grams
- Grated Parmesan cheese - 50 grams
- Mozzarella cheese - 100 grams
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutmeg - 1/4 teaspoon
- Tomato sauce - 400 grams
- Onion - 1 small, finely chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt, black pepper, and nutmeg.
- Remove the skillet from heat and let the mixture cool slightly. Then, mix in the ricotta and half of the grated Parmesan cheese.
- Stuff each cannelloni tube with the spinach and ricotta mixture using a small spoon or piping bag.
- Spread a thin layer of tomato sauce on the bottom of a baking dish.
- Arrange the stuffed cannelloni in the dish and cover with the remaining tomato sauce. Sprinkle the mozzarella and the rest of the Parmesan cheese on top.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Allow to cool for a few minutes before serving. Garnish with fresh herbs if desired.
