- Zucchini - 1 small, diced
- Potato - 1 medium, diced
- Chicken broth - 500 ml
- Olive oil - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Add the diced carrots, celery, zucchini, and potato to the pot. Cook for about 5 minutes, stirring occasionally.
- Add the chicken breast to the pot, followed by the chicken broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Season the soup with salt, black pepper, and lemon juice. Stir in the chopped parsley before serving.
