  • Garlic - 2 cloves, minced
  • Zucchini - 1 small, diced
  • Potato - 1 medium, diced
  • Chicken broth - 500 ml
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  2. Add the diced carrots, celery, zucchini, and potato to the pot. Cook for about 5 minutes, stirring occasionally.
  3. Add the chicken breast to the pot, followed by the chicken broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the chicken is cooked through.
  4. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  5. Season the soup with salt, black pepper, and lemon juice. Stir in the chopped parsley before serving.
