Ingredients

  • Calamari tubes - 4 medium (about 300g)
  • Cooked rice - 100g
  • Shrimp, peeled and chopped - 100g
  • Onion, finely chopped - 1 small (about 50g)
  • Garlic, minced - 2 cloves
  • Paprika - 1 teaspoon
  • Parsley, chopped - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Tomato sauce - 200g
  • Lemon wedges - for serving

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion and garlic until translucent, about 5 minutes.
  3. Add the chopped shrimp, paprika, salt, and pepper to the pan. Cook for another 3-4 minutes until the shrimp are pink.
  4. In a bowl, combine the cooked rice, shrimp mixture, and chopped parsley. Mix well.
  5. Stuff each calamari tube with the rice mixture, leaving a little space at the end to prevent bursting during cooking. Secure the openings with toothpicks if necessary.
  6. In a baking dish, spread half of the tomato sauce on the bottom. Place the stuffed calamari on top and cover with the remaining tomato sauce.
  7. Drizzle with the remaining olive oil and season with additional salt and pepper if desired.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes to slightly brown the top.
  9. Serve hot with lemon wedges on the side.
