Ingredients
- Calamari tubes - 4 medium (about 300g)
- Cooked rice - 100g
- Shrimp, peeled and chopped - 100g
- Onion, finely chopped - 1 small (about 50g)
- Garlic, minced - 2 cloves
- Paprika - 1 teaspoon
- Parsley, chopped - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Tomato sauce - 200g
- Lemon wedges - for serving
Steps
- Preheat the oven to 180°C (350°F).
- In a pan, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion and garlic until translucent, about 5 minutes.
- Add the chopped shrimp, paprika, salt, and pepper to the pan. Cook for another 3-4 minutes until the shrimp are pink.
- In a bowl, combine the cooked rice, shrimp mixture, and chopped parsley. Mix well.
- Stuff each calamari tube with the rice mixture, leaving a little space at the end to prevent bursting during cooking. Secure the openings with toothpicks if necessary.
- In a baking dish, spread half of the tomato sauce on the bottom. Place the stuffed calamari on top and cover with the remaining tomato sauce.
- Drizzle with the remaining olive oil and season with additional salt and pepper if desired.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes to slightly brown the top.
- Serve hot with lemon wedges on the side.
