- Tomato (chopped) - 1 medium
- White wine - 100 ml
- Fish or vegetable stock - 200 ml
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley (chopped) - for garnish
Steps
- Heat olive oil in a medium saucepan over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Stir in the chopped tomato and cook for about 5 minutes until softened.
- Add the squid to the pan, cooking for 3-4 minutes until they turn opaque.
- Pour in the white wine and let it simmer for 2-3 minutes to reduce slightly.
- Add the squid ink, stock, bay leaf, salt, and black pepper, stirring to combine.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, uncovered.
- Remove the bay leaf and adjust seasoning if necessary.
- Serve warm, garnished with chopped parsley, over rice or with bread.
