Ingredients

  • Zucchini - 2 medium
  • Ground turkey or chicken - 250 grams
  • Red bell pepper - 1 small, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Parmesan cheese - 30 grams, grated

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create space for the filling. Set aside the scooped flesh.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  4. Add the diced red bell pepper and cook for another 2 minutes until softened.
  5. Incorporate the ground turkey or chicken into the skillet, breaking it apart with a spatula. Season with paprika, salt, and black pepper. Cook until the meat is browned, about 5-7 minutes.
  6. Chop the reserved zucchini flesh and add it to the skillet, cooking for an additional 3 minutes.
  7. Stir in the chopped parsley and remove the skillet from heat.
  8. Fill each zucchini half with the meat mixture, pressing lightly to pack it in.
  9. Place the stuffed zucchinis in a baking dish and sprinkle grated Parmesan cheese on top.
  10. Bake in the preheated oven for 20-25 minutes or until the zucchinis are tender and the cheese is golden.
