- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Parmesan cheese - 30 grams, grated
Steps
- Preheat the oven to 190°C (375°F).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create space for the filling. Set aside the scooped flesh.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the diced red bell pepper and cook for another 2 minutes until softened.
- Incorporate the ground turkey or chicken into the skillet, breaking it apart with a spatula. Season with paprika, salt, and black pepper. Cook until the meat is browned, about 5-7 minutes.
- Chop the reserved zucchini flesh and add it to the skillet, cooking for an additional 3 minutes.
- Stir in the chopped parsley and remove the skillet from heat.
- Fill each zucchini half with the meat mixture, pressing lightly to pack it in.
- Place the stuffed zucchinis in a baking dish and sprinkle grated Parmesan cheese on top.
- Bake in the preheated oven for 20-25 minutes or until the zucchinis are tender and the cheese is golden.
