  • Toasted almonds - 30 grams
  • Red wine vinegar - 1 tablespoon
  • Paprika (smoked) - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your grill or oven to a high temperature (about 220°C or 428°F).
  2. Prepare the calçots by trimming the roots and removing any damaged outer layers.
  3. Drizzle the calçots with olive oil and sprinkle with salt.
  4. Place the calçots directly on the grill or in the oven. Grill for about 15-20 minutes, turning occasionally, until they are charred and tender.
  5. While the calçots are grilling, prepare the romesco sauce. Roast the tomatoes and red bell pepper on the grill or in the oven for about 10 minutes until slightly charred.
  6. In a food processor, combine the roasted tomatoes, red bell pepper, garlic, toasted almonds, red wine vinegar, smoked paprika, salt, and black pepper.
  7. Blend until smooth, adding a little olive oil if necessary to achieve a creamy consistency.
  8. Once the calçots are done, remove them from the grill and serve hot with the romesco sauce for dipping.
