- Toasted almonds - 30 grams
- Red wine vinegar - 1 tablespoon
- Paprika (smoked) - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your grill or oven to a high temperature (about 220°C or 428°F).
- Prepare the calçots by trimming the roots and removing any damaged outer layers.
- Drizzle the calçots with olive oil and sprinkle with salt.
- Place the calçots directly on the grill or in the oven. Grill for about 15-20 minutes, turning occasionally, until they are charred and tender.
- While the calçots are grilling, prepare the romesco sauce. Roast the tomatoes and red bell pepper on the grill or in the oven for about 10 minutes until slightly charred.
- In a food processor, combine the roasted tomatoes, red bell pepper, garlic, toasted almonds, red wine vinegar, smoked paprika, salt, and black pepper.
- Blend until smooth, adding a little olive oil if necessary to achieve a creamy consistency.
- Once the calçots are done, remove them from the grill and serve hot with the romesco sauce for dipping.
