  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Tomato - 1 medium, roasted
  • Red bell pepper - 1, roasted and peeled
  • Garlic - 2 cloves, roasted
  • Almonds - 30 grams
  • Red wine vinegar - 1 tablespoon
  • Paprika - 1 teaspoon
  • Water - 2 tablespoons

Steps

  1. Preheat your grill or oven to a high temperature.
  2. Clean the calçots, removing any outer layers and trimming the roots.
  3. Drizzle the calçots with olive oil and sprinkle with salt.
  4. Place the calçots on the grill or in the oven and roast for about 15-20 minutes, turning occasionally, until they are charred and tender.
  5. While the calçots are cooking, prepare the romesco sauce. In a blender, combine the roasted tomato, red bell pepper, roasted garlic, almonds, red wine vinegar, paprika, and water.
  6. Blend until smooth, adjusting the consistency with more water if necessary, and season with salt to taste.
  7. Once the calçots are done, remove them from the grill and serve warm with the romesco sauce on the side.
