Ingredients

  • Calçots - 8 pieces
  • Olive oil - 2 tablespoons

  • Tomatoes - 2 medium, roasted
  • Red bell pepper - 1, roasted and peeled
  • Garlic - 2 cloves, roasted
  • Almonds - 50 grams, toasted
  • Bread - 1 slice, toasted
  • Paprika - 1 teaspoon
  • Red wine vinegar - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a grill or grill pan over medium-high heat.
  2. Trim the roots of the calçots, leaving the green tops intact, and rinse them under cold water.
  3. Drizzle the calçots with olive oil and sprinkle with salt. Grill them for about 10-12 minutes, turning occasionally, until they are charred and tender.
  4. While the calçots are grilling, prepare the romesco sauce. In a blender, combine the roasted tomatoes, roasted red bell pepper, roasted garlic, toasted almonds, toasted bread, paprika, red wine vinegar, salt, and black pepper.
  5. Blend until smooth, adjusting the consistency with a little water if necessary.
  6. Once the calçots are done, remove them from the grill and serve them hot with the romesco sauce on the side for dipping.
