- Red bell pepper - 1, roasted and peeled
- Garlic - 2 cloves, roasted
- Almonds - 50 grams, toasted
- Bread - 1 slice, toasted
- Paprika - 1 teaspoon
- Red wine vinegar - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat a grill or grill pan over medium-high heat.
- Trim the roots of the calçots, leaving the green tops intact, and rinse them under cold water.
- Drizzle the calçots with olive oil and sprinkle with salt. Grill them for about 10-12 minutes, turning occasionally, until they are charred and tender.
- While the calçots are grilling, prepare the romesco sauce. In a blender, combine the roasted tomatoes, roasted red bell pepper, roasted garlic, toasted almonds, toasted bread, paprika, red wine vinegar, salt, and black pepper.
- Blend until smooth, adjusting the consistency with a little water if necessary.
- Once the calçots are done, remove them from the grill and serve them hot with the romesco sauce on the side for dipping.
