Ingredients

  • Tomatoes (ripe) - 2 medium
  • Red bell pepper - 1 medium
  • Garlic - 2 cloves
  • Almonds (blanched) - 30 grams
  • Red wine vinegar - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon

Steps

  1. Preheat the grill or a grill pan over medium-high heat.
  2. Rinse the calçots under cold water and trim off the roots and any damaged leaves.
  3. Drizzle the calçots with olive oil and sprinkle with salt.
  4. Grill the calçots for about 10-15 minutes, turning occasionally, until they are tender and slightly charred.
  5. While the calçots are grilling, prepare the Romesco sauce. Roast the tomatoes and red bell pepper on the grill until charred, about 8-10 minutes.
  6. In a blender, combine the grilled tomatoes, red bell pepper, garlic, almonds, red wine vinegar, smoked paprika, and salt. Blend until smooth.
  7. Adjust the seasoning of the Romesco sauce if needed, adding more salt or vinegar to taste.
  8. Once the calçots are done, remove them from the grill and serve hot with the Romesco sauce on the side.
