- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Vegan mayonnaise - 2 tablespoons
Steps
- Press the tofu for about 15 minutes to remove excess moisture, then crumble it into a mixing bowl.
- Add minced garlic, smoked paprika, cumin, salt, black pepper, and chopped parsley to the crumbled tofu. Mix well until all ingredients are combined.
- Shape the tofu mixture into two patties, ensuring they are compact and hold together.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for 5-7 minutes on each side until golden brown.
- While the patties are cooking, lightly toast the burger buns in the remaining olive oil until golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked tofu patty, sliced tomato, avocado, and a dollop of vegan mayonnaise. Top with the other half of the bun and serve.
