Ingredients

  • Sorghum - 100 grams
  • Chickpeas - 100 grams, canned or cooked
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Whole grain burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Rinse the sorghum under cold water and cook it in a pot with 300 ml of water for about 20-25 minutes, or until tender. Drain and set aside to cool.
  2. In a mixing bowl, mash the chickpeas with a fork, leaving some chunks for texture.
  3. Add the cooked sorghum, chopped red onion, minced garlic, ground cumin, paprika, salt, black pepper, and chopped parsley to the bowl. Mix well until combined.
  4. Form the mixture into two burger patties. If the mixture is too wet, add a small amount of flour to help bind it.
  5. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and crispy.
  6. To assemble, place each patty on a burger bun, add a lettuce leaf, a slice of tomato, and a tablespoon of vegan mayonnaise. Top with the other half of the bun and serve immediately.
