- Portobello mushrooms - 200 grams
- Chickpeas - 100 grams (cooked)
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Breadcrumbs - 50 grams
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Burger buns - 2
- Lettuce leaves - 2
Steps
- Preheat your oven to 200°C (390°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat, add the chopped onion and minced garlic, and sauté until translucent.
- Add the portobello mushrooms, diced, and cook until softened, about 5-7 minutes.
- In a mixing bowl, combine the cooked chickpeas, sautéed mushrooms, paprika, cumin, salt, black pepper, and chopped parsley. Mash the mixture until well combined but still slightly chunky.
- Add the breadcrumbs to the mixture and stir until it forms a patty-like consistency.
- Shape the mixture into two equal-sized patties.
- Heat the remaining tablespoon of olive oil in the skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
- While the patties are cooking, toast the burger buns in the oven for about 3-4 minutes.
- Assemble the burgers by placing a patty on each bun, adding lettuce leaves and any other desired toppings, and serve immediately.
