Ingredients

  • Portobello mushrooms - 200 grams
  • Chickpeas - 100 grams (cooked)
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Breadcrumbs - 50 grams
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Burger buns - 2
  • Lettuce leaves - 2

Steps

  1. Preheat your oven to 200°C (390°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat, add the chopped onion and minced garlic, and sauté until translucent.
  3. Add the portobello mushrooms, diced, and cook until softened, about 5-7 minutes.
  4. In a mixing bowl, combine the cooked chickpeas, sautéed mushrooms, paprika, cumin, salt, black pepper, and chopped parsley. Mash the mixture until well combined but still slightly chunky.
  5. Add the breadcrumbs to the mixture and stir until it forms a patty-like consistency.
  6. Shape the mixture into two equal-sized patties.
  7. Heat the remaining tablespoon of olive oil in the skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
  8. While the patties are cooking, toast the burger buns in the oven for about 3-4 minutes.
  9. Assemble the burgers by placing a patty on each bun, adding lettuce leaves and any other desired toppings, and serve immediately.
