Ingredients
- Ground beef - 250 grams
- Olive oil - 2 tablespoons
- Zucchini - 100 grams, diced
- Red bell pepper - 50 grams, diced
- Yellow bell pepper - 50 grams, diced
- Eggplant - 100 grams, diced
- Garlic - 1 clove, minced
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil - 10 grams, chopped
- Cheese (optional) - 30 grams, shredded
Steps
- In a large bowl, combine the ground beef with salt, black pepper, and half of the smoked paprika. Form into two equal patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the patties and cook for about 5-6 minutes on each side, or until they reach your desired doneness. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic, zucchini, red bell pepper, yellow bell pepper, and eggplant. Sauté for about 8-10 minutes, or until the vegetables are tender.
- Stir in the remaining smoked paprika and chopped basil. Cook for an additional 2 minutes, then remove from heat.
- To serve, place each beef patty on a plate and top with the sautéed vegetable medley. If desired, sprinkle with shredded cheese.
