Ingredients

  • Ground beef - 250 grams
  • Olive oil - 2 tablespoons
  • Zucchini - 100 grams, diced
  • Red bell pepper - 50 grams, diced
  • Yellow bell pepper - 50 grams, diced
  • Eggplant - 100 grams, diced
  • Garlic - 1 clove, minced
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 10 grams, chopped
  • Cheese (optional) - 30 grams, shredded

Steps

  1. In a large bowl, combine the ground beef with salt, black pepper, and half of the smoked paprika. Form into two equal patties.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the patties and cook for about 5-6 minutes on each side, or until they reach your desired doneness. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic, zucchini, red bell pepper, yellow bell pepper, and eggplant. Sauté for about 8-10 minutes, or until the vegetables are tender.
  4. Stir in the remaining smoked paprika and chopped basil. Cook for an additional 2 minutes, then remove from heat.
  5. To serve, place each beef patty on a plate and top with the sautéed vegetable medley. If desired, sprinkle with shredded cheese.
