- Red bell pepper - 1 medium
- Yellow bell pepper - 1 medium
- Chickpeas - 200 grams (cooked, drained)
- Garlic - 2 cloves, minced
- Red onion - 50 grams, finely chopped
- Oats - 50 grams (rolled or quick oats)
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Vegan mayonnaise - 2 tablespoons
- Tomato - 1 medium, sliced
Steps
- Preheat the oven to 200°C (400°F).
- Cut the red and yellow bell peppers in half, remove the seeds, and place them cut-side down on a baking tray. Roast in the oven for 20 minutes until the skins are blistered.
- While the peppers are roasting, heat olive oil in a skillet over medium heat. Add the chopped red onion and minced garlic, cooking until softened (about 5 minutes).
- In a mixing bowl, mash the cooked chickpeas with a fork or potato masher, leaving some chunks for texture.
- Add the roasted peppers (after removing skins), sautéed onion and garlic, oats, cumin, paprika, salt, black pepper, and chopped parsley to the bowl. Mix well until combined.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat a non-stick skillet over medium heat and cook the patties for about 5 minutes on each side until golden brown.
- To assemble, place each patty on a whole wheat burger bun, top with lettuce, sliced tomato, and vegan mayonnaise. Serve immediately.
