Ingredients

  • Red bell pepper - 1 medium
  • Yellow bell pepper - 1 medium
  • Chickpeas - 200 grams (cooked, drained)
  • Garlic - 2 cloves, minced
  • Red onion - 50 grams, finely chopped
  • Oats - 50 grams (rolled or quick oats)
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Vegan mayonnaise - 2 tablespoons
  • Tomato - 1 medium, sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red and yellow bell peppers in half, remove the seeds, and place them cut-side down on a baking tray. Roast in the oven for 20 minutes until the skins are blistered.
  3. While the peppers are roasting, heat olive oil in a skillet over medium heat. Add the chopped red onion and minced garlic, cooking until softened (about 5 minutes).
  4. In a mixing bowl, mash the cooked chickpeas with a fork or potato masher, leaving some chunks for texture.
  5. Add the roasted peppers (after removing skins), sautéed onion and garlic, oats, cumin, paprika, salt, black pepper, and chopped parsley to the bowl. Mix well until combined.
  6. Form the mixture into two patties, about 1.5 cm thick.
  7. Heat a non-stick skillet over medium heat and cook the patties for about 5 minutes on each side until golden brown.
  8. To assemble, place each patty on a whole wheat burger bun, top with lettuce, sliced tomato, and vegan mayonnaise. Serve immediately.
