- Potatoes - 300 grams
- Chickpea flour - 50 grams
- Garlic powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley, chopped - 2 tablespoons
- Olive oil - 2 tablespoons
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato, sliced - 1 medium
- Avocado, sliced - 1/2
Steps
- Peel and dice the potatoes into small cubes, then boil them in salted water for about 15 minutes or until tender.
- Drain the potatoes and let them cool slightly before mashing them in a bowl.
- Add chickpea flour, garlic powder, smoked paprika, salt, black pepper, and chopped parsley to the mashed potatoes and mix until well combined.
- Form the mixture into two patties of equal size.
- Heat 1 tablespoon of olive oil in a non-stick pan over medium heat.
- Cook the patties for about 5-7 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, toast the burger buns in another pan with the remaining olive oil until they are lightly browned.
- Assemble the burger by placing a lettuce leaf on the bottom bun, followed by the potato patty, tomato slices, and avocado slices. Top with the other half of the bun.
