Ingredients

  • Potatoes - 300 grams
  • Chickpea flour - 50 grams
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Whole grain burger buns - 2
  • Lettuce leaves - 2
  • Tomato, sliced - 1 medium
  • Avocado, sliced - 1/2

Steps

  1. Peel and dice the potatoes into small cubes, then boil them in salted water for about 15 minutes or until tender.
  2. Drain the potatoes and let them cool slightly before mashing them in a bowl.
  3. Add chickpea flour, garlic powder, smoked paprika, salt, black pepper, and chopped parsley to the mashed potatoes and mix until well combined.
  4. Form the mixture into two patties of equal size.
  5. Heat 1 tablespoon of olive oil in a non-stick pan over medium heat.
  6. Cook the patties for about 5-7 minutes on each side, or until golden brown and crispy.
  7. While the patties are cooking, toast the burger buns in another pan with the remaining olive oil until they are lightly browned.
  8. Assemble the burger by placing a lettuce leaf on the bottom bun, followed by the potato patty, tomato slices, and avocado slices. Top with the other half of the bun.
