- Walnuts - 100 grams
- Chickpeas - 200 grams (cooked)
- Breadcrumbs - 50 grams
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon (for cooking)
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Avocado - 1 small, sliced
- Whole grain burger buns - 2
Steps
- Preheat a pan over medium heat and add 1 tablespoon of olive oil.
- Sauté the chopped onion and minced garlic in the pan until translucent, about 5 minutes.
- In a food processor, combine the walnuts, cooked chickpeas, sautéed onion and garlic, smoked paprika, cumin, salt, and pepper. Pulse until the mixture is well combined but still chunky.
- Transfer the mixture to a bowl and add the breadcrumbs. Mix until you can form patties; if too wet, add more breadcrumbs as needed.
- Form the mixture into two burger patties.
- In the same pan, add a little more olive oil if necessary and cook the patties for about 4-5 minutes on each side, until golden brown.
- Toast the whole grain burger buns lightly on the pan for 1-2 minutes.
- Assemble the burgers by placing a walnut patty on each bun, topped with lettuce, tomato slices, and avocado.
