Ingredients

  • Walnuts - 100 grams
  • Chickpeas - 200 grams (cooked)
  • Breadcrumbs - 50 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for cooking)
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Avocado - 1 small, sliced
  • Whole grain burger buns - 2

Steps

  1. Preheat a pan over medium heat and add 1 tablespoon of olive oil.
  2. Sauté the chopped onion and minced garlic in the pan until translucent, about 5 minutes.
  3. In a food processor, combine the walnuts, cooked chickpeas, sautéed onion and garlic, smoked paprika, cumin, salt, and pepper. Pulse until the mixture is well combined but still chunky.
  4. Transfer the mixture to a bowl and add the breadcrumbs. Mix until you can form patties; if too wet, add more breadcrumbs as needed.
  5. Form the mixture into two burger patties.
  6. In the same pan, add a little more olive oil if necessary and cook the patties for about 4-5 minutes on each side, until golden brown.
  7. Toast the whole grain burger buns lightly on the pan for 1-2 minutes.
  8. Assemble the burgers by placing a walnut patty on each bun, topped with lettuce, tomato slices, and avocado.
