Ingredients

  • Morcilla (Spanish black pudding) - 200g
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lettuce leaves - 4 large
  • Aioli - 4 tablespoons

Steps

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the sliced red bell pepper and zucchini to the skillet, season with salt and pepper, and cook for about 5-7 minutes until softened. Remove from heat and stir in chopped parsley.
  4. In the same skillet, add the remaining tablespoon of olive oil and heat over medium-high heat.
  5. Slice the morcilla into thick rounds and add to the skillet. Cook for 3-4 minutes on each side until crispy and heated through.
  6. To assemble, place two lettuce leaves on each plate, layer with slices of morcilla, top with the sautéed vegetables, and drizzle with aioli.
