- Morcilla (Spanish black pudding) - 200g
- Olive oil - 2 tablespoons
- Red bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lettuce leaves - 4 large
- Aioli - 4 tablespoons
Steps
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Add the sliced red bell pepper and zucchini to the skillet, season with salt and pepper, and cook for about 5-7 minutes until softened. Remove from heat and stir in chopped parsley.
- In the same skillet, add the remaining tablespoon of olive oil and heat over medium-high heat.
- Slice the morcilla into thick rounds and add to the skillet. Cook for 3-4 minutes on each side until crispy and heated through.
- To assemble, place two lettuce leaves on each plate, layer with slices of morcilla, top with the sautéed vegetables, and drizzle with aioli.
