  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons (for cooking)
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1, sliced

Steps

  1. In a large mixing bowl, combine the corn kernels, cooked quinoa, chickpea flour, chopped red onion, minced garlic, cumin, paprika, salt, black pepper, and chopped parsley.
  2. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
  3. Form the mixture into 2 equal-sized patties.
