Ingredients

  • Cooked lentils - 200 grams
  • Bread crumbs - 50 grams
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1/2, finely chopped
  • Carrot - 1 small, grated
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 1 tablespoon, chopped
  • Whole grain burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced

Steps

  1. In a large bowl, mash the cooked lentils with a fork or potato masher until slightly chunky.
  2. Add the finely chopped red onion, minced garlic, chopped red bell pepper, grated carrot, cumin powder, paprika, salt, black pepper, and chopped parsley to the mashed lentils. Mix well until fully combined.
  3. Gradually incorporate the bread crumbs into the mixture until it holds together. If the mixture is too wet, add more bread crumbs as needed.
  4. Form the lentil mixture into two burger patties, about 1.5 cm thick.
  5. Heat the olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
  6. While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked lentil patty, sliced tomato, and avocado. Top with the other half of the bun.
  8. Serve immediately and enjoy your Burguer de Lentejas!
