Ingredients

  • Chickpeas - 200 grams (cooked)
  • Walnuts - 50 grams (chopped)
  • Almonds - 50 grams (chopped)
  • Oats - 50 grams
  • Garlic - 2 cloves (minced)
  • Onion - 1 small (finely chopped)
  • Fresh parsley - 2 tablespoons (chopped)
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for cooking)
  • Whole grain burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 (sliced)
  • Avocado - 1 (sliced)

Steps

  1. In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth but still slightly chunky.
  2. Add the chopped walnuts, almonds, oats, minced garlic, chopped onion, chopped parsley, smoked paprika, cumin, salt, and black pepper to the mashed chickpeas.
  3. Mix all the ingredients until well combined. If the mixture is too wet, add a bit more oats to help bind it.
  4. Divide the mixture into two equal portions and shape each into a burger patty.
  5. Heat olive oil in a non-stick skillet over medium heat. Once hot, add the burger patties and cook for about 5-6 minutes on each side until golden brown and heated through.
  6. While the patties are cooking, toast the whole grain burger buns in a toaster or on a separate skillet until lightly browned.
  7. Assemble the burgers by placing each patty on a toasted bun, and topping with lettuce, tomato slices, and avocado slices.
