- Chickpeas - 200 grams (cooked)
- Walnuts - 50 grams (chopped)
- Almonds - 50 grams (chopped)
- Oats - 50 grams
- Garlic - 2 cloves (minced)
- Onion - 1 small (finely chopped)
- Fresh parsley - 2 tablespoons (chopped)
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for cooking)
- Whole grain burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 (sliced)
- Avocado - 1 (sliced)
Steps
- In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth but still slightly chunky.
- Add the chopped walnuts, almonds, oats, minced garlic, chopped onion, chopped parsley, smoked paprika, cumin, salt, and black pepper to the mashed chickpeas.
- Mix all the ingredients until well combined. If the mixture is too wet, add a bit more oats to help bind it.
- Divide the mixture into two equal portions and shape each into a burger patty.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the burger patties and cook for about 5-6 minutes on each side until golden brown and heated through.
- While the patties are cooking, toast the whole grain burger buns in a toaster or on a separate skillet until lightly browned.
- Assemble the burgers by placing each patty on a toasted bun, and topping with lettuce, tomato slices, and avocado slices.
