- Couscous - 100 grams
- Water - 150 ml
- Chickpeas (canned, rinsed) - 100 grams
- Red bell pepper (finely chopped) - 50 grams
- Carrot (grated) - 50 grams
- Red onion (finely chopped) - 30 grams
- Garlic (minced) - 1 clove
- Fresh parsley (chopped) - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Whole grain burger buns - 2
- Avocado (sliced) - 1/2
- Tomato (sliced) - 1 medium
- Lettuce leaves - 2
Steps
- In a small pot, bring 150 ml of water to a boil and add 100 grams of couscous. Cover, remove from heat, and let sit for 5 minutes.
- In a mixing bowl, mash 100 grams of canned chickpeas with a fork until slightly chunky.
- Add the cooked couscous, chopped red bell pepper, grated carrot, red onion, minced garlic, chopped parsley, ground cumin, paprika, salt, and black pepper to the chickpeas. Mix well until combined.
- Form the mixture into two equal-sized patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook each patty for about 4-5 minutes on each side or until golden brown.
- While the patties are cooking, toast the whole grain burger buns in the remaining olive oil until crispy.
- Assemble the burgers by placing each patty on a bun and topping with sliced avocado, tomato, and lettuce leaves.
