Ingredients

  • Couscous - 100 grams
  • Water - 150 ml
  • Chickpeas (canned, rinsed) - 100 grams
  • Red bell pepper (finely chopped) - 50 grams
  • Carrot (grated) - 50 grams
  • Red onion (finely chopped) - 30 grams
  • Garlic (minced) - 1 clove
  • Fresh parsley (chopped) - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Whole grain burger buns - 2
  • Avocado (sliced) - 1/2
  • Tomato (sliced) - 1 medium
  • Lettuce leaves - 2

Steps

  1. In a small pot, bring 150 ml of water to a boil and add 100 grams of couscous. Cover, remove from heat, and let sit for 5 minutes.
  2. In a mixing bowl, mash 100 grams of canned chickpeas with a fork until slightly chunky.
  3. Add the cooked couscous, chopped red bell pepper, grated carrot, red onion, minced garlic, chopped parsley, ground cumin, paprika, salt, and black pepper to the chickpeas. Mix well until combined.
  4. Form the mixture into two equal-sized patties.
  5. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook each patty for about 4-5 minutes on each side or until golden brown.
  6. While the patties are cooking, toast the whole grain burger buns in the remaining olive oil until crispy.
  7. Assemble the burgers by placing each patty on a bun and topping with sliced avocado, tomato, and lettuce leaves.
