Ingredients

  • Chistorra sausage - 250 grams
  • Large portobello mushrooms - 2 (for the buns)
  • Red bell pepper - 1, sliced
  • Fresh spinach - 50 grams
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Sliced avocado - 1, for topping

Steps

  1. Preheat a grill or skillet over medium heat.
  2. Remove the chistorra sausage from its casing and form it into two patties.
  3. Season the patties with garlic powder, paprika, salt, and black pepper on both sides.
  4. Grill the patties for about 5-7 minutes on each side, or until fully cooked and golden brown.
  5. While the patties are cooking, drizzle olive oil on the portobello mushrooms and season with salt and pepper.
  6. Grill the portobello mushrooms for about 5 minutes on each side until tender and slightly charred.
  7. In the last few minutes of cooking, add the sliced red bell pepper to the grill and cook until softened.
  8. Assemble the burgers by placing the chistorra patty on a portobello mushroom cap, topping it with fresh spinach, grilled red bell pepper, and sliced avocado.
  9. Cap with another portobello mushroom and serve immediately.
