Ingredients

  • Salt cod (bacalao) - 200 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Garlic clove - 1, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Avocado - 1 medium, for sauce
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Mixed greens - for serving

Steps

  1. Soak the salt cod in water for 24 hours, changing the water several times to remove excess salt.
  2. Once desalted, drain the cod and cook it in boiling water for 5 minutes, then flake it into a bowl.
  3. Add almond flour, egg, minced garlic, chopped parsley, paprika, black pepper, and a pinch of salt to the flaked cod. Mix until well combined.
  4. Form the mixture into two patties.
  5. Heat olive oil in a skillet over medium heat and cook the patties for about 4-5 minutes on each side until golden brown.
  6. While the patties are cooking, prepare the avocado sauce by mashing the avocado in a bowl and mixing in lemon juice and a pinch of salt.
  7. To serve, place the cooked cod patties on a plate with mixed greens and top with the avocado sauce.
