- Salt cod (bacalao) - 200 grams
- Almond flour - 50 grams
- Egg - 1 large
- Garlic clove - 1, minced
- Fresh parsley - 2 tablespoons, chopped
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Avocado - 1 medium, for sauce
- Lemon juice - 1 tablespoon
- Salt - to taste
- Mixed greens - for serving
Steps
- Soak the salt cod in water for 24 hours, changing the water several times to remove excess salt.
- Once desalted, drain the cod and cook it in boiling water for 5 minutes, then flake it into a bowl.
- Add almond flour, egg, minced garlic, chopped parsley, paprika, black pepper, and a pinch of salt to the flaked cod. Mix until well combined.
- Form the mixture into two patties.
- Heat olive oil in a skillet over medium heat and cook the patties for about 4-5 minutes on each side until golden brown.
- While the patties are cooking, prepare the avocado sauce by mashing the avocado in a bowl and mixing in lemon juice and a pinch of salt.
- To serve, place the cooked cod patties on a plate with mixed greens and top with the avocado sauce.
