Ingredients

  • Red beans - 200 grams (cooked)
  • Cooked quinoa - 100 grams
  • Red bell pepper - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Oats - 50 grams (ground into flour)
  • Fresh parsley - 2 tablespoons, chopped
  • Whole grain burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Avocado - 1 small, sliced

Steps

  1. In a large bowl, mash the cooked red beans with a fork or potato masher until mostly smooth.
  2. Add the cooked quinoa, finely chopped red bell pepper, minced garlic, olive oil, cumin, paprika, salt, black pepper, ground oats, and parsley to the mashed beans. Mix until well combined.
  3. Form the mixture into two equal-sized patties.
  4. Heat a non-stick skillet over medium heat and lightly grease it with olive oil. Cook the patties for about 5-7 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced tomato, and avocado. Top with the other half of the bun.
