- Red beans - 200 grams (cooked)
- Cooked quinoa - 100 grams
- Red bell pepper - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Oats - 50 grams (ground into flour)
- Fresh parsley - 2 tablespoons, chopped
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Avocado - 1 small, sliced
Steps
- In a large bowl, mash the cooked red beans with a fork or potato masher until mostly smooth.
- Add the cooked quinoa, finely chopped red bell pepper, minced garlic, olive oil, cumin, paprika, salt, black pepper, ground oats, and parsley to the mashed beans. Mix until well combined.
- Form the mixture into two equal-sized patties.
- Heat a non-stick skillet over medium heat and lightly grease it with olive oil. Cook the patties for about 5-7 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced tomato, and avocado. Top with the other half of the bun.
