  • Parsley - 1 tablespoon, chopped
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lettuce leaves - 4 for serving
  • Sliced avocado - 1/2 for serving
  • Lemon wedges - 2 for garnish

Steps

  1. Clean the clams thoroughly under cold water, ensuring to remove any sand or debris.
  2. In a food processor, combine the cleaned clams, almond flour, egg, minced garlic, chopped parsley, salt, and black pepper. Pulse until the mixture is well blended but still has some texture.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  4. Form the clam mixture into two patties and carefully place them in the skillet. Cook for 4-5 minutes on each side until golden brown and cooked through.
  5. While the patties are cooking, prepare the serving plates with lettuce leaves and sliced avocado.
  6. Once the patties are cooked, remove them from the skillet and place them on the lettuce leaves. Drizzle with the remaining olive oil and serve with lemon wedges on the side.
