Ingredients

  • Canned chickpeas - 240 grams, drained and rinsed
  • Green olives - 100 grams, pitted and chopped
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat breadcrumbs - 50 grams
  • Burger buns - 2 units
  • Tomato - 1, sliced
  • Lettuce leaves - 2

Steps

  1. In a large mixing bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth.
  2. Add the chopped green olives, red onion, minced garlic, fresh parsley, olive oil, ground cumin, smoked paprika, salt, black pepper, and breadcrumbs to the mashed chickpeas.
  3. Mix all the ingredients thoroughly until well combined.
  4. Divide the mixture into two equal portions and form each portion into a patty.
  5. Heat a non-stick skillet over medium heat and add a little olive oil.
  6. Cook the patties for about 5-7 minutes on each side, or until golden brown and heated through.
  7. While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
  8. Assemble the burgers by placing each patty on a bun, topped with sliced tomato and lettuce leaves.
