- Canned chickpeas - 240 grams, drained and rinsed
- Green olives - 100 grams, pitted and chopped
- Red onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat breadcrumbs - 50 grams
- Burger buns - 2 units
- Tomato - 1, sliced
- Lettuce leaves - 2
Steps
- In a large mixing bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth.
- Add the chopped green olives, red onion, minced garlic, fresh parsley, olive oil, ground cumin, smoked paprika, salt, black pepper, and breadcrumbs to the mashed chickpeas.
- Mix all the ingredients thoroughly until well combined.
- Divide the mixture into two equal portions and form each portion into a patty.
- Heat a non-stick skillet over medium heat and add a little olive oil.
- Cook the patties for about 5-7 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
- Assemble the burgers by placing each patty on a bun, topped with sliced tomato and lettuce leaves.
