Ingredients

  • Carrots - 300 grams, grated
  • Chickpeas - 200 grams, canned and drained
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Oats - 50 grams, ground
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Egg - 1 large
  • Burger buns - 2, whole grain preferred
  • Yogurt - 100 grams, for sauce
  • Lemon juice - 1 tablespoon for sauce
  • Salt - to taste for sauce
  • Lettuce - 2 leaves, for serving
  • Tomato - 1 medium, sliced for serving

Steps

  1. In a large mixing bowl, combine grated carrots, drained chickpeas, finely chopped onion, minced garlic, and chopped parsley.
  2. Using a fork or potato masher, mash the chickpeas and mix well with the other ingredients.
  3. Add ground oats, cumin, paprika, salt, black pepper, and the egg to the mixture. Stir until well combined.
  4. Form the mixture into two burger patties.
  5. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and cooked through.
  6. While the burgers are cooking, prepare the sauce by mixing yogurt, lemon juice, and salt in a small bowl.
  7. Toast the burger buns in the remaining olive oil in the skillet for about 1-2 minutes until lightly golden.
  8. Assemble the burgers by placing a lettuce leaf and a slice of tomato on the bottom half of each bun, topping with the carrot burger patty, and drizzling with the yogurt sauce. Cover with the top half of the bun.
  9. Serve immediately and enjoy your Burger de Zanahoria!
