Burger de Zanahoria

- Carrots - 300 grams, grated
- Chickpeas - 200 grams, canned and drained
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Oats - 50 grams, ground
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Egg - 1 large
- Burger buns - 2, whole grain preferred
- Yogurt - 100 grams, for sauce
- Lemon juice - 1 tablespoon for sauce
- Salt - to taste for sauce
- Lettuce - 2 leaves, for serving
- Tomato - 1 medium, sliced for serving
Steps
- In a large mixing bowl, combine grated carrots, drained chickpeas, finely chopped onion, minced garlic, and chopped parsley.
- Using a fork or potato masher, mash the chickpeas and mix well with the other ingredients.
- Add ground oats, cumin, paprika, salt, black pepper, and the egg to the mixture. Stir until well combined.
- Form the mixture into two burger patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and cooked through.
- While the burgers are cooking, prepare the sauce by mixing yogurt, lemon juice, and salt in a small bowl.
- Toast the burger buns in the remaining olive oil in the skillet for about 1-2 minutes until lightly golden.
- Assemble the burgers by placing a lettuce leaf and a slice of tomato on the bottom half of each bun, topping with the carrot burger patty, and drizzling with the yogurt sauce. Cover with the top half of the bun.
