Ingredients

  • Red bell pepper - 1 large
  • Yellow bell pepper - 1 large
  • Garlic - 2 cloves, minced
  • Chickpeas - 200 grams, drained and rinsed
  • Breadcrumbs - 50 grams
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Whole wheat burger buns - 2
  • Avocado - 1, sliced
  • Lettuce leaves - 2

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the red and yellow bell peppers in half, remove the seeds, and place them on a baking tray with the cut side facing down. Drizzle with 1 tablespoon of olive oil and roast in the oven for about 20 minutes until the skins are blistered.
  3. While the peppers are roasting, heat 1 tablespoon of olive oil in a pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. In a mixing bowl, combine the roasted chickpeas, sautéed garlic, cumin, smoked paprika, salt, black pepper, and fresh parsley. Mash with a fork or potato masher until well combined but still slightly chunky.
  5. Add breadcrumbs to the chickpea mixture until it holds together. Form the mixture into two patties.
  6. In the same pan used for the garlic, cook the patties over medium heat for about 4-5 minutes on each side until golden brown.
  7. Once the peppers are done, remove them from the oven and let them cool slightly. Peel off the skins and set aside.
  8. Toast the whole wheat burger buns in the oven for 2-3 minutes until lightly golden.
  9. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a chickpea patty, a roasted bell pepper, and slices of avocado. Top with the other half of the bun.
  10. Serve immediately with your favorite condiments.
