Ingredients
- Red bell pepper - 1 large
- Yellow bell pepper - 1 large
- Garlic - 2 cloves, minced
- Chickpeas - 200 grams, drained and rinsed
- Breadcrumbs - 50 grams
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Whole wheat burger buns - 2
- Avocado - 1, sliced
- Lettuce leaves - 2
Steps
- Preheat the oven to 200°C (400°F).
- Slice the red and yellow bell peppers in half, remove the seeds, and place them on a baking tray with the cut side facing down. Drizzle with 1 tablespoon of olive oil and roast in the oven for about 20 minutes until the skins are blistered.
- While the peppers are roasting, heat 1 tablespoon of olive oil in a pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- In a mixing bowl, combine the roasted chickpeas, sautéed garlic, cumin, smoked paprika, salt, black pepper, and fresh parsley. Mash with a fork or potato masher until well combined but still slightly chunky.
- Add breadcrumbs to the chickpea mixture until it holds together. Form the mixture into two patties.
- In the same pan used for the garlic, cook the patties over medium heat for about 4-5 minutes on each side until golden brown.
- Once the peppers are done, remove them from the oven and let them cool slightly. Peel off the skins and set aside.
- Toast the whole wheat burger buns in the oven for 2-3 minutes until lightly golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a chickpea patty, a roasted bell pepper, and slices of avocado. Top with the other half of the bun.
- Serve immediately with your favorite condiments.
