- Walnuts - 150 grams
- Chickpeas - 100 grams (cooked)
- Garlic - 2 cloves
- Onion - 1 small, finely chopped
- Red bell pepper - 1, finely chopped
- Breadcrumbs - 50 grams
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Egg - 1, beaten
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Aioli - 2 tablespoons
Steps
- Preheat your oven to 180°C (350°F).
- In a food processor, combine the walnuts, chickpeas, garlic, onion, red bell pepper, cumin, paprika, salt, and pepper. Pulse until well combined but still slightly chunky.
- Transfer the mixture to a bowl and stir in the breadcrumbs and beaten egg until fully incorporated.
- Shape the mixture into two equal-sized patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, prepare the aioli by mixing it with a little lemon juice if desired.
- Once the patties are cooked, assemble the burgers on a plate by placing the lettuce, walnut patty, tomato slices, avocado, and a dollop of aioli on top.
- Serve immediately with your favorite side.
