Ingredients

  • cooked green lentils - 200 grams
  • breadcrumbs - 50 grams
  • red onion - 1 small, finely chopped
  • garlic - 2 cloves, minced
  • cumin - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • egg - 1, beaten
  • olive oil - 2 tablespoons (for cooking)
  • whole grain burger buns - 2
  • lettuce leaves - 2
  • tomato - 1, sliced
  • avocado - 1/2, sliced
  • aioli or vegan mayo - 2 tablespoons

Steps

  1. In a large bowl, mash the cooked lentils with a fork or potato masher until mostly smooth, leaving some texture.
  2. Add the finely chopped red onion, minced garlic, cumin, smoked paprika, salt, black pepper, breadcrumbs, and beaten egg to the lentils. Mix until well combined.
  3. Form the lentil mixture into two equal patties, ensuring they hold together well.
  4. Heat 1 tablespoon of olive oil in a frying pan over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
  5. While the patties cook, toast the burger buns in another pan or toaster.
  6. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the lentil patty, sliced tomato, avocado, and a dollop of aioli or vegan mayo. Top with the other half of the bun.
