- cooked green lentils - 200 grams
- breadcrumbs - 50 grams
- red onion - 1 small, finely chopped
- garlic - 2 cloves, minced
- cumin - 1 teaspoon
- smoked paprika - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- egg - 1, beaten
- olive oil - 2 tablespoons (for cooking)
- whole grain burger buns - 2
- lettuce leaves - 2
- tomato - 1, sliced
- avocado - 1/2, sliced
- aioli or vegan mayo - 2 tablespoons
Steps
- In a large bowl, mash the cooked lentils with a fork or potato masher until mostly smooth, leaving some texture.
- Add the finely chopped red onion, minced garlic, cumin, smoked paprika, salt, black pepper, breadcrumbs, and beaten egg to the lentils. Mix until well combined.
- Form the lentil mixture into two equal patties, ensuring they hold together well.
- Heat 1 tablespoon of olive oil in a frying pan over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
- While the patties cook, toast the burger buns in another pan or toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the lentil patty, sliced tomato, avocado, and a dollop of aioli or vegan mayo. Top with the other half of the bun.
