- Lemon juice - 1 tablespoon

Steps
- Preheat a grill or skillet over medium heat.
- Remove the chistorra sausage from its casing and form it into two equal-sized patties.
- Add olive oil to the skillet or grill, then cook the chistorra patties for about 4-5 minutes on each side, until browned and cooked through.
- While the patties are cooking, prepare the salad by combining romaine lettuce, cherry tomatoes, red onion, avocado, and cilantro in a bowl.
- Drizzle the salad with lemon juice and season with salt and black pepper to taste, tossing gently to combine.
- Once the chistorra patties are cooked, remove them from the heat and let them rest for a minute.
