Ingredients

  • Chistorra sausage - 200g

  • Romaine lettuce leaves - 4 large
  • Cherry tomatoes - 100g, halved
  • Red onion - 50g, thinly sliced
  • Avocado - 1 medium, sliced
  • Fresh cilantro - a handful, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a grill or skillet over medium heat.
  2. Remove the chistorra sausage from its casing and form it into two equal-sized patties.
  3. Add olive oil to the skillet or grill, then cook the chistorra patties for about 4-5 minutes on each side, until browned and cooked through.
  4. While the patties are cooking, prepare the salad by combining romaine lettuce, cherry tomatoes, red onion, avocado, and cilantro in a bowl.
  5. Drizzle the salad with lemon juice and season with salt and black pepper to taste, tossing gently to combine.
  6. Once the chistorra patties are cooked, remove them from the heat and let them rest for a minute.
